摘要:
通过改变加热时间来研究银杏花粉中的黄酮含量、天然维生素E、灭菌效果和添加剂维生素E等指标的变化,结果表明在加热温度为80℃的条件下,随加热时间的延长天然维生素E和添加剂维生素E的含量呈现大幅度降低的趋势,菌落总数显著减少,而黄酮的含量变化不大。综合以上各指标值和生产成本,初步确定20min为银杏花粉食品灭菌的最优加热时间。
